Producer: Jose Ivan Agurcia Martinez Origin: Nueva Segovia, Nicaragua Varietal: Parainema Altitude: 1450masl Process: Anaerobic natural Notes: Plum and macadamia Finca Los Grandillos - named after the local Granadillo tree, as is tradition with many Nicaraguan farms - has been in the Martinez family for over 50 years. The farm is cultivated with varieties such as Caturra, Bourbon, Parainema and the rarer Maracuturra varieties. The cherries, once harvested, are manually selected, washed in tanks, and placed in ait-tight plastic barrels for a period that can vary between 72 and 360 hours, depending on microbial activity. Once the have met certain targets, they are then dried on African beds for 20 days. Suitable for filter brew methods
